Fogline Farm

We all know the value of food in our lives, not only for health but for pleasure; and the quality of that food should be of supreme importance. We, at The Lexington House, believe passionately in not only making the best dishes possible but also in using the best ingredients that we can find. It is because of that passion that we now have a close partnership with Fogline Farm (whose name you may recognize for having a continual place in our ever-evolving menu).

Fogline Farm is located at the historic Manildi Ranch, a 38 acre certified California Heritage Farm located above Soquel Village in the Santa Cruz Mountains. The land at Manildi Ranch has been cultivated since 1905. At 900 feet above sea level, one would have a hard time imagining a more perfect place to grown nutrient rich produce or to pasture meat and eggs. Fogline Farm owners, Caleb Barron and Johnny Wilson, are dedicated to providing quality produce and meats in the most natural manner. As their website states, "To the best of our ability, we commit to steward the land in the most ecologically responsible way."

Fogline Farm uses no pesticides, herbicides or fungicides and grows no genetically modified organisms among its approximately 25 crops. They grow their vegetables using strong ecological principles such as crop rotation, which means taking advantage of crops that enrich back into the soil what the previous crops had consumed from it. The animals raised upon the farm are also a large part of that fertilization program. By providing the animals organic feed and allowing them to roam free on pastures flourishing with foods in accordance to their natural diet, the animals help to control pests and fertilize the soil.

Fogline Farm raises pastured pork with a mix of Tamworth, Old Spot and Berkshire hogs. The Berkshire hogs are allowed to farrow outside with minimal human intervention. Fogline Farm also raises pastured poultry of the Cornish Cross breed, and mix heritage breed for egg laying hens. All animals on the farm are treated in accord with the most humane forms of animal husbandry and are fed the healthiest and most natural diet.

Fogline Farm's level of excellence is a level to which we aspire with each of our dishes, not only in dishes composed of their ingredients, but in all of our dishes.
